Recipe: Vegan Mashed Potato Veggie Shooters

November is back and what does that mean for me? Fasting month – no meat, no sugar. So, what better than to get in the kitchen and make new recipes! These Vegan Mashed Potato Veggie Shooters are super easy.

Ingredients 

  • 2 cups and a half of diced potatoes with skin
  • 1 small zucchini
  • 1 small eggplant the thin ones
  • 1 small onion, leek or a few chives
  • 1 cup of water
  • A few tablespoons of olive oil
  • Paprika
  • Salt
  • Mixed Italian Herbs (for taste)

Instructions

Dice the veggies and put them in a pot with the water and the olive oil. The smaller the faster they cook. Then add salt, paprika, and the mixed herbs for taste. Cook until everything is cooked and creamy. Take potato masher or put in blender, depending on the consistency desired, I hand mashed then I leave some chunks.
